Easy White Chili Recipe

This is a great, easy to make chicken chili recipe.



1 lb. White Beans (large or small), soaked overnight or quick-soak method

6 cups Chicken Broth

1 Onion, chopped

4 cups Chicken Broth

1 Onion, chopped

2 Tbsp. Oil

1 1/2 tsp. Oregano flakes

2 Tbsp. Ground Cumin

2 (4 oz.) cans Green Chilies, chopped

4 cups cooked Chicken, diced

3 cups Monterey Jack Cheese, grated

Sour cream to taste (1/4 to 1/2 cup)



Drain the soaking water off the beans. Then combine the beans, chicken broth, and onion bringing to a boil.  Reduce the heat and let simmer until soft.


Add 4 more cups of chicken broth.  Sauté another onion in 1 to 2 Tbsp. of oil until it’s tender.


Stir in the oregano, cumin, green chilies, chicken, and cheese, until all ingredients mix and cheese melts.
