Authentic Colorado-style chili recipe.
Ingredients:
3 Tbsp. All-purpose Flour
1 1/2 lbs. Pork, boneless (cut into 1” cubes)
1 Tbsp. Bacon drippings or vegetable oil
1 Tbsp. Vegetable Oil
1 Tbsp. All-purpose Flour
1/2 tsp. Garlic Powder
2 Tbsp. Chili Powder
1/4 cup Onion, chopped
1 tsp. Cumin
1 (4 oz.) can Tomato Sauce
Salt and Pepper to taste
3 cups Water
Directions:
Place 3 Tbsp. of flour in a plastic bag. Add the pork and shake to lightly coat it with flour. Then set the meat aside.
Heat the bacon drippings and vegetable oil in a Dutch oven over medium high heat. Add the pork and cook until meat is evenly browned, about 5 to 8 minutes.
Stir in 1 Tbsp. of flour, and cook 3 minutes. Stir in the garlic powder, chile powder, onion, cumin, tomato sauce, salt, pepper, and water. Bringing it to a boil, then reduce the heat to medium low and let simmer until pork is just falling apart, about 1 1/2 to 2 hours.
