Tofu Chili Recipe

This is a great tofu vegetarian recipe, sure to please everyone!

 

Ingredients:

1 (14 oz.) package of Firm or Extra Firm Tofu, crumbled

3 Tbsp. Vegetable Oil

1 Green Bell Pepper, diced

1 Cup Mushrooms, sliced

1 Onion, diced

3 Tbsp. Chili Powder

3 Garlic Cloves, minced

1/4 tsp. Cayenne Pepper

1/2 tsp. Cumin

Salt and Pepper to taste

1 (28 oz.) can Whole or Diced Tomatoes, with liquid

1 (14 oz.) can Tomato Sauce

1 (28 oz.) can Kidney Beans, drained

3 Tbsp. Sugar

 

Directions:

Sauté the tofu in vegetable oil over medium high heat in a large pot for 3 minutes. Add the green peppers, mushrooms, onions, chili powder, garlic, cayenne, cumin, salt, and pepper, and let them cook until the vegetables are barely tender, usually about 5 minutes.

 

Add the tomatoes, tomato sauce, beans and sugar and bring down to a slow simmer. Cover the pot and cook for 45 minutes.
