This is a very tasty beef chili recipe.
2 Tbsp. Vegetable Oil
2 Onions, chopped
2 Garlic Cloves, smashed and chopped
1 Yellow Pepper, chopped
1 1/2 lbs. Lean Ground Beef
1/2 tsp. Caraway Seeds
1/2 tsp. Celery Seeds
1 (19 oz.) can Red Kidney Beans, drained
1 1/2 cups Stewed Tomatoes
1 1/4 cups Beef Stock, heated
4 Tbsp. Tomato Paste
Red Peppers, a few crushed
Salt and Pepper
Preheat oven to 350 degrees F.
Heat oil in large, deep skillet. Add onions, garlic, and yellow pepper and cook 7 to 8 minutes over medium heat.
Stir in meat and season. Add all seasonings and mix very well. Cook 5 to 6 minutes over medium heat.
Stir in kidney beans and continue cooking 4 to 5 minutes.
Add tomatoes and sugar and cook 2 to 3 minutes. Stir in beef stock and tomato paste with the correct seasoning. Bring to boil.
Cover pan and cook 45 minutes in oven. Serve chili with fresh bread if desired.
